The History of Recipes
We can follow the history of written recipes back into the far past, in fact as far into history as the Egyptians, and potentially, even further back. Interesting though that is, sadly, these early cookbooks were just basic pictorial, hieroglyphic or cunieform recipes for preparing food.
In fact, the most ancient recipe in existence, according to historians are some ancient tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful and blissful. Later on, in The time of the romans around 25BC a man called Apicius created a number of documents showing how to cook the recipes cooked by wealthy roman citizens. In his works, he recounts how the meals were split into appetizers, main course and afters, a very modern way of dining. Aspicius recounts how the chefs of Roman times were skilled in the use of a good variety of spices, including a few that are still present in modern kitchens such as bay, fennel and asafoetida. Later, we have some interesting books from the fourteenth century - one book titled `Forme of Cury`, and another, similary named `Curye on Inglish`. Despite their titles, these two books are not about the spicy food that we all know today, but instead accounts of the types of food on the menues of the upper classes of that time. Later on in the 1400s, knights returning from the crusades brought us a variety of foods, spices and herbs from Arab cooking, including spices like coriander, parsley, and rosemary. The introduction of these new culinary ideas led to an increase in cookery books, the majority of which are kept safe in private cookery archives. By the time we get to the 20th century, cooking publications are greatly in demand due to more people being able to read, people having increased leisure time and having more money. |
