The History of Recipes
We are able to follow the history of meal recipes way back into history, certainly as far as the Egyptians, and possibly even further than that. In practice though, generally, these early cookbooks were just very simple hieroglyphic or cunieform instructions for preparing meals.
As we move into The time of the romans around 25BC a man called Apicius assembled a number of scripts detailing recipes prepared by wealthy Romans. In his scrolls, he describes how the meals of wealthy Romans were separated into appetizers, main meal and dessert, something that is very familiar to us today. Aspicius also tells us how the cooks of his times were skilled in the use of a wide range of herbs, including some familiar names such as basil, rue and parsley. Later, in the fifteenth century, the Crusaders brought back a variety of spices and herbs from the holy lands, including rosemary and coriander. These new foods and tastes created an explosion in recipe publications, some of which are kept safe in private cookery archives. By the advent of the 20th century, recipe publications were highly popular mostly due to better eduction, more leisure time and disposable income. |
