The History of Recipes
Written cooking instructions as an idea can be found back into the far past, in fact as far as pharonic Egypt, and possibly even further than that. However, in the main part, these old cookbooks were just very basic pictorial recipes for meal preparation.
In an interesting twist, the most ancient recipe discovered so far, according to experts is a series of tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. As we move into The time of the roman empire around 25BC a man called Apicius created a few documents showing how to cook the recipes prepared by the Romans. In his works, he describes how the meals were split into hors d`oeuvre, main course and afters, a very modern way of dining. Aspicius describes how the cooks of his times used many different aromatic flavors, including many that are still in use today for example basil, fennel and parsley. In the 15th century, knights returning from the crusades brought us many new foods and spices from middle-east cuisine, such as basil and coriander. These new herbs and spices caused a torrent in manuscripts on food, the majority of which are now in private libraries. Over the next few hundred years, the rich families of Wesstern Europe strove to lay on the most extravagent banquests, and because of this cooks and their recipe collections became highly prized. Nevertheless, it wasn`t until the nineteenth century that formal cookery and cookery books became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to assembling, trying out, and recording recipes of the day. When we get to the 1900s, cooking publications are starting to become popular as a result of higher levels of literacy, more free time and disposable income. The arrival of TV brings us celebrity TV chefs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of computers and the internet, allowing everyone to search through thousands of recipes like those on sites such as this. |
