The History of Recipes
We are able to follow the history of written recipes back into the distant past, in truth as far back as the early Egyptians, and maybe further still. Interesting though that is, these, old cookbooks were just very simple hieroglyphic or cunieform recipes for preparing food.
Later on, in The time of the roman empire around 25BC a man called Apicius assembled some documents which described recipes cooked by the Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into starters, main course and desserts, something we still use today. Additionally, he recounts how the ancient cooks used many herbs and spices, including a few that will be familiar to modern cooks for example thyme, fennel and parsley. During the following few hundred years, the powerful families of Europe tried to offer the most exotic banquets, and because of this the best cooks and their recipe collections could command a high salary. However, it was during the nineteenth century that fine cooking and recipe books became popular. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collating, verifying, and publishing the recipes of their peers. By the time we get to the 1900s, recipe publications were starting to become popular due to higher levels of literacy, people having more leisure time and having more money to spend. |
