The History of Recipes
It is quite feasible to prove the history of recipes back into the far past, in truth as far back into recorded history as ancient Egypt, and potentially, even further back. Interesting though that maybe, generally, these ancient records were just simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the most ancient recipe discovered, according to Professor Solomon Katz, are some stone tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated and blissful. As our culinary historical trip moves to more modern times we have two interesting cookery books which appeared in the 14th Century ; a cookery book called `Forme of Cury`, and another titled `Curye on Inglish`. Perhaps surprisingly, these books are nothing to do with the indian food that we all know today, but rather descriptions of the types of food prepared by the cooks of the rich and wealthy people of the period. Over the next few centuries, the rich families of the West tried to lay on the most exotic meals, and as a result the best cooks and their recipe collections were much in demand. Nevertheless, it wasn`t until the 1800s that fine cookery and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to assembling, testing, and recording recipes that were common in the better off homes of the day. By the arrival of the twentieth century, cooking publications were increasing in popularity mostly as a result of increased literacy, more leisure time and having more disposable income. |
