The History of Recipes
Academics have proved the existance of recipes far back into history, at least as far back as early Egypt, and maybe further still. However, mostly, these old cook books were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
Interestingly, the oldest recipe discovered so far, according to historians is a series of ancient tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel exhilarated and blissful. During Roman times 25BC a man called Apicius compiled a few documents detailing recipes cooked by wealthy roman citizens. In his scrolls, he recounts how the meals were split into hors d`oeuvre, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he tells us how the ancient Romans were skilled in the use of many aromatic flavours, including some that we all recognise like bay, fennel and dill. In the fifteenth century, the Crusaders brought back many foods and spices from Arab cuisine, including spices such as coriander, parsley, and basil. These new foods and spices prompted an explosion in recipe manuscripts, the majority of which still exist in private collections. By the arrival of the 1900s, cooking books were in great demand, as a result of higher levels of literacy, leisure time and having more money. Like it or not, the introduction of television brought us TV cookery programs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting everyone to access massive numbers of recipes like the ones you can find on sites such as the one you are reading now. |
