The History of Recipes
Recipes as an idea can be found back into the far past, certainly as far back as pharonic Egypt, and maybe even further. However, in the main part, these ancient cook books were just primitive hieroglyphic or cunieform instructions for meal preparation.
In an interesting twist, the oldest recipe found, according to academics are a few stone tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful and exhilarated. Later on, in The time of the romans 25BC a man called Apicius created a number of scripts describing recipes cooked by wealthy Romans. He describes how the meals of wealthy Romans were separated into hors d`oeuvre, main course and desserts, a style of dining still practiced today. Aspicius recounts how the Romans used a good variety of spices, including many that are still in use today like bay, rue and parsley. Later on, in the 15th century, knights returning from the crusades brought us many foods and spices from the Middle-East, including spices such as basil and rosemary. These new herbs and spices prompted an increase in books on cooking, many of which are now in academic collections. Over the succeeding few centuries, the rich families of the West competed with each other to serve the most extravagent banquests, and as a result chefs and their collection of recipes were much in demand. Nevertheless, it wasn`t until the nineteenth century that fine cooking and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to collecting, testing, and recording recipes that were common in the better off homes of the day. The arrival of TV brings us cooking programs and the demand for the spin-off recipe books. And that brings us to the present day and the internet revolution, permitting everybody to search through thousands of recipes such as those found on this recipe site. |
