The History of Recipes
Transcribed cooking instructions as a concept can be tracked way back into the distant past, in truth as far back into recorded history as pharonic Egypt, and potentially, even further back. Interesting though that maybe, mostly, these ancient records were just simple hieroglyphic or cunieform recipes for preparing food.
Later on, in The time of the romans 25BC a man called Apicius assembled a collection of scripts which described recipes prepared by the Romans. In his scrolls, he tells us how the meals were split into appetizers, main course and afters, something that is very familiar to us today. This early Roman chef recounts how the ancient cooks made use of a good variety of spices, including a few you will know like basil, fennel and asafoetida. Over the succeeding few centuries, the powerful families of the West tried to lay on the most extravagent banquests, and as a result the best chefs and their recipe collections became highly prized. Even so, it was during the nineteenth century the formal cooking and recipe publications reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to collecting, testing, and publishing recipes to allow everyone to enjoy them. When we get to the 20th century, recipe books are increasing in popularity as a result of increased literacy, people having increased leisure time and disposable income. |
