The History of Recipes
It is quite feasible to follow the history of written cooking instructions way back into ancient history, in truth as far into history as the early Egyptians, and potentially, even further back. Having said that, these, old records were just primitive hieroglyphic or cunieform instructions for food preparation.
Interestingly, the most ancient recipe discovered, according to academics are some tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated. During Roman times around 25BC a Roman scholar, called Apicius, assembled some scrolls which described recipes prepared by wealthy Romans. In his publication, Apicius tells us how the meals were divided into starters, entrees and dessert, something that is very familiar to us today. Additionally, he describes how the Roman chefs were skilled in the use of many spices and herbs, including some that we all recognise such as basil, rue and asafoetida. In the fifteenth century, knights returning from the crusades brought us many new foods and herbs from the holy lands, such as coriander, parsley, and rosemary. These new foods and spices was responsible for a surge in recipe manuscripts, some of which still exist in private cookery archives. During the succeeding few hundred years, the wealthy families of Europe tried to lay on the most exotic meals, and consequentially cooks and their recipes were at a premium. Nevertheless, it was during the 1800s that fine cookery and recipe publications became really popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collating, testing, and writing down the recipes that were being prepared for the better households. By the arrival of the 20th century, recipe publications are increasing in popularity mostly as a result of better eduction, people having more free time and having more disposable income. |
