The History of Recipes

It is possible to trace the history of written recipes far back into the far past, in fact as far back as ancient Egypt, and maybe further still. In practice though, in the main part, these old records were just very simple pictorial recipes for food preparation.

Interestingly, the most ancient recipe in existence, according to Professor Solomon Katz, are a few clay tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful and exhilarated.

Later on, in Roman times 25BC a man called Apicius created a few documents showing how to cook the recipes cooked by his fellow Romans. In his scrolls, he describes how the meals of wealthy Romans were separated into hors d`oeuvres, main course and afters, something we still use today. This early Roman chef tells us how the ancient Romans were skilled in the use of many different aromatic flavours, including a few you will know for example thyme, fennel and parsley.

In the fifteenth century, knights returning from the crusades brought us a variety of foods and herbs from Arab countries, such as basil and rosemary. These new foods and tastes caused a torrent in manuscripts on cooking, most of which are kept safe in academic collections.

During the succeeding few hundred years, the rich families of Wesstern Europe strove to offer the most extravagent meals, and as a consequence, cooks and their collection of recipes were highly sought after. However, it wasn`t until the nineteenth century that cooking and recipe books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to assembling, trying out, and writing down recipes common in their social group.

Like it or not, the introduction of television brings us TV chefs and the demand for the accompanying recipe books.

And that brings us to the present day and the invention of computers and the internet, permitting everyone to access massive numbers of recipes like those on sites such as the one you are reading now.
