The History of Recipes
Experts have proved the existance of recipes way back into distant history, at least as far back into history as pharonic Egypt, and quite possibly further than that. Having said that, in the main part, these ancient records were just very simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
Fascinatingly, the oldest recipe discovered so far, according to experts is a series of clay tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated. During the time of the Roman Empire a roman called Apicius assembled a number of documents describing recipes prepared by wealthy roman citizens. In his scrolls, he tells us how the roman meals were separated into hors d`oeuvres, entrees and afters, a very modern way of dining. This early Roman chef describes how the Romans made use of a wide range of spices, including many that are still in use today for example basil, rue and asafoetida. Over the following few hundred years, the upper-class families of the West competed with each other to offer the most extravagent meals, and because of this the best chefs and their recipe collections became highly prized. Nevertheless, it wasn`t until the 1800s the formal cooking and recipe books really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, testing, and recording the recipes of their peers. Like it or not, the introduction of television brings us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting everybody to search through massive numbers of recipes just like those on this web site. |
