The History of Recipes
It is quite feasible to track the history of transcribed cooking instructions way back into distant history, at least as far back into recorded history as early Egypt, and maybe further still. Having said that, generally, these old cookbooks were just very simple pictorial, hieroglyphic or cunieform instructions for preparing food.
Progressing into The time of the romans around 25BC a roman called Apicius assembled a few documents describing recipes prepared by the Romans. In his works, he tells us how the roman meals were separated into hors d`oeuvre, main course and afters, a very modern way of dining. Aspicius also describes how the early Romans used a wide range of aromatic flavours, including a few that will be familiar to modern cooks such as bay, fennel and dill. Later, in the 15th century, knights returning from the crusades brought back many foods and herbs from Arab cooking, including basil and rosemary. These new foods and spices prompted a torrent in manuscripts on cooking, the majority of which still exist in private collections. Like it or not, the introduction of TV brings us TV cookery programs and the recipe books that accompanied them. Which pretty much brings us to the present day and the internet revolution, permitting everybody to search through thousands of recipes just like those on sites such as the one you are reading now. |
