The History of Recipes
We can trace the history of `recipes` far back into antiquity, at least as far into history as the Egyptians, and possibly even further. Interesting though that maybe, in the main part, these early records were just simple pictorial, hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the most ancient recipe in existence, according to experts in ancient history is a series of ancient tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `exhilarated, wonderful and blissful`. Later on, in Roman times 25BC a roman called Apicius assembled a number of documents which described recipes cooked by the Romans. In his scrolls, he tells us how the meals of wealthy Romans were divided into appetizers, main course and dessert, a very modern way of dining. This early Roman chef describes how the early Romans used a good variety of herbs, including a few that are still present in modern kitchens like basil, mint and asafoetida. In the fifteenth century, knights returning from the crusades brought back many new foods and spices from Arab countries, including spices like parsley and basil. These new foods and spices created an increase in recipe publications, the majority of which are now in academic collections. By the arrival of the 1900s, cookery publications were starting to become popular as a result of more people being able to read, people having increased leisure time and a general increase in wealth. Like it or not, the introduction of television brings us celebrity TV chefs and the demand for the spin-off recipe books. Which brings us neatly up to date and the internet revolution, permitting everybody to access thousands of recipes such as those found on the site you are now reading. |
