2 tbsp olive oil
1 lb sweet italian sausage,
1 casings removed, crumbled
1/2 tsp dried red pepper flakes
1/2 cup diced onions
3 cl garlic, minced
1 can italian plum tomatoes,
1 drained, coarsely chopped
1 1/2 cup whipping cream
1/2 tsp salt
12 oz bow tie pasta
3 tbsp minced fresh parsley
1 freshly grated parmesan
1 cheese

Heat oil in heavy large skillet over medium heat. Add sausage and
pepper flakes. Cook until sausage is no longer pink, stirring
frequently, about 7 minutes. Add onion and garlic to skillet and cook
until onion is tender and sausage is light brown, stirring
occasionally, about 7 minutes. Add tomatoes, cream and salt. Simmer
until mixture thickens slightly, about 4 minutes.
Cook pasta in large pot of boiling salted water until just tender but
still firm to bite, stirring occasionally to prevent sticking. Drain.
Serves 4.

The History of Recipes
Written recipes as an idea can be tracked way back into history, certainly as far back into history as the Egypt of the Pharoahs, and quite possibly further than that. However, mostly, these ancient records were just basic pictorial recipes for preparing meals.
As we move into The time of the romans 25BC a roman called Apicius wrote some documents detailing recipes enjoyed by his fellow Romans. In his works, he describes how the meals were split into hors d`oeuvres, entrees and desserts, something that is very familiar to us today. Aspicius informs us how the chefs of Roman times used many aromatic flavors, including a few you will know such as basil, fennel and dill. Later, in the 15th century, people returning from the crusades brought back a variety of foods and herbs from the East, such as coriander, parsley, basil and rosemary. These new herbs and spices caused an outbreak in books on cookery, some of which are kept safe in academic collections. By the time we get to the twentieth century, cook books are highly popular mostly as a result of increased literacy, people having more free time and a general increase in wealth. |
