The History of Recipes

Recipes as an idea can be traced far back into antiquity, at least as far back into history as the early Egyptians, and potentially, even further back. Having said that, generally, these ancient cookbooks were just basic pictorial recipes for meal preparation.

In an interesting twist, the oldest recipe found, according to Professor Solomon Katz, are a few ancient tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful and exhilarated.

During the time of the Romans a roman called Apicius wrote some documents describing recipes prepared by wealthy roman citizens. In his scrolls, he recounts how the meals were split into appetizers, main meal and desserts, something we still use today. This early Roman chef informs us how the chefs of Roman times made use of a wide range of spices and herbs, including a few that will be familiar to modern cooks like basil, fennel and parsley.

Over the next few hundred years, the powerful and wealthy houses competed with each other to offer the best banquets, and as a result the best chefs and their recipes were greatly in demand. Nevertheless, it was during the 19th century that fine cooking and recipe books reached a high level of popularity. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, testing, and publishing recipes to allow everyone to enjoy them.

When we get to the 20th century, cook books are in great demand, due to increased literacy, people having increased leisure time and being a little richer.

The arrival of TV gave us TV cookery programs and the spin-off recipe books.

Which brings us neatly up to date and the invention of the internet, allowing everybody to search through massive numbers of recipes just like those on this site.
