2 tbsp olive oil
1 lb sweet italian sausage,
1 casings removed, crumbled
1/2 tsp dried red pepper flakes
1/2 cup diced onions
3 cl garlic, minced
1 can italian plum tomatoes,
1 drained, coarsely chopped
1 1/2 cup whipping cream
1/2 tsp salt
12 oz bow tie pasta
3 tbsp minced fresh parsley
1 freshly grated parmesan
1 cheese

Heat oil in heavy large skillet over medium heat. Add sausage and
pepper flakes. Cook until sausage is no longer pink, stirring
frequently, about 7 minutes. Add onion and garlic to skillet and cook
until onion is tender and sausage is light brown, stirring
occasionally, about 7 minutes. Add tomatoes, cream and salt. Simmer
until mixture thickens slightly, about 4 minutes.
Cook pasta in large pot of boiling salted water until just tender but
still firm to bite, stirring occasionally to prevent sticking. Drain.
Serves 4.

The History of Recipes
It is quite feasible to prove the history of recipes far back into distant history, at least as far as pharonic Egypt, and possibly even further than that. Interesting though that maybe, generally, these ancient records were just basic pictorial, hieroglyphic or cunieform instructions for food preparation.
Closer to modern times, we find two interesting books which were published in the 14th Century ; a cookery book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Amusingly, these books are nothing to do with the curry that is popular today, but instead accounts of the types of food on the tables of the upper classes of that time. Later, in the 15th century, people returning from the crusades brought back many foods and spices from Arab countries, such as basil and coriander. These new spices and herbs caused a surge in manuscripts on cooking, many of which are kept safe in private cookery archives. Like it or not, the introduction of TV gave us cooking programs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, allowing us all to access massive numbers of recipes just like those on this recipe site. |
