The History of Recipes
It is quite feasible to track the history of written cooking instructions far back into antiquity, in fact as far as ancient Egypt, and maybe further still. Interesting though that is, in the main part, these ancient records were just simple hieroglyphic recipes for food preparation.
As we move into Roman times around 25BC a roman called Apicius wrote some scripts showing how to cook the recipes prepared by wealthy Romans. In his scrolls, he recounts how the meals were divided into appetizers, main meal and dessert, a style of dining still practiced today. He also informs us how the early Romans made use of a good variety of spices, including some that we all recognise such as basil, rue and dill. During the following few centuries, the powerful and wealthy houses strove to lay on the most exotic meals, and consequentially the best cooks and their recipes were at a premium. However, it was during the 19th century that fine cookery and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collecting, testing, and recording the recipes that were being prepared for the better households. By the advent of the 1900s, cook books are starting to become popular mostly due to better eduction, people having more leisure time and having more disposable income. |
