1/4 cup butter
10 tbsp flour
5 cup soup stock
1 salt & pepper
1 cheese, grated
Directions
Melt the butter and stir in flour, add the stock slowly to prevent
lumping. When well-blended, add seasonings to taste. Cover pot and
cook slowly for 2 hours. When serving, sprinkle each bowlful with

The History of Recipes
It is quite feasible to track the history of transcribed cooking instructions way back into the far past, at least as far into history as ancient Egypt, and possibly even further. In practice though, these, old cookbooks were just primitive pictorial instructions for food preparation.
During Roman times 25BC a roman called Apicius compiled a few documents detailing recipes prepared by his fellow Romans. He recounts how the meals of wealthy Romans were separated into starters, main meal and afters, something that is very familiar to us today. This early Roman chef informs us how the Roman cooks used a wide range of herbs and spices, including many that are still in use today such as basil, rue and parsley. During the succeeding few centuries, the rich and powerful families of Europe competed to serve the most extravagent banquests, and consequentially the best cooks and their collection of recipes could command a high salary. However, it was during the 19th century that cooking and recipe publications rose to prominence. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to assembling, verifying, and recording popular recipes of the day. Like it or not, the introduction of television brings us TV cooks and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, permitting us all to access thousands of recipes just like those on our web site. |
