The History of Recipes
Historians have found proof that recipes existed way back into history, in fact as far back as ancient Egypt, and possibly even further than that. However, sadly, these early cookbooks were just basic hieroglyphic instructions for preparing food.
As we move into The time of the romans around 25BC a Roman scholar, called Apicius, assembled some scrolls detailing recipes prepared by wealthy Romans. He describes how the meals were divided into hors d`oeuvres, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also recounts how the cooks of his times used many herbs, including some that we all recognise such as basil, rue and dill. Later, in the fifteenth century, knights returning from the crusades brought us a variety of foods and spices from the Middle-East, including spices such as coriander, parsley, and basil. The introduction of these new tastes caused an eruption in recipe manuscripts, the majority of which are now in academic collections. By the advent of the 20th century, recipe books were highly popular as a result of increased literacy, increased leisure time and disposable income. |
