The History of Recipes
It is possible to trace the history of meal recipes way back into ancient history, certainly as far into history as the Egypt of the Pharoahs, and maybe further still. Interesting though that maybe, generally, these early cookbooks were just very basic pictorial instructions for food preparation.
Progressing into The time of the roman empire around 25BC a roman called Apicius created a number of documents which described recipes enjoyed by wealthy roman citizens. In his publication, Apicius tells us how the roman meals were split into starters, main meal and afters, a very modern way of dining. Aspicius also tells us how the chefs of Roman times made use of a wide range of herbs, including many that are still in use today such as basil, fennel and parsley. Over the following few centuries, the families of Europe tried to serve the most extravagent meals, and as a consequence, the best chefs and their collection of recipes increased in prestige. Notwithstanding that, it was during the 19th century the formal cooking and recipe books really came of age. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, verifying, and recording popular recipes of the day. When we get to the 1900s, cookbooks were increasing in popularity mostly as a result of more people being able to read, people having increased spare time and a general increase in wealth. |
