The History of Recipes
Transcribed cooking instructions as an idea can be observed far back into the far past, in fact as far back into recorded history as early Egypt, and quite possibly further than that. However, in the main part, these early cookbooks were just basic hieroglyphic instructions for preparing meals.
In fact, the oldest recipe in existence, according to experts is a collection of tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful. Progressing into Roman times around 25BC a man called Apicius compiled a collection of documents detailing recipes enjoyed by the Romans. In his scrolls, he recounts how the meals were split into starters, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also informs us how the ancient cooks were skilled in the use of many aromatic flavours, including a few you will know for example thyme, mint and dill. Later on in the 1400s, the Crusaders brought back a variety of spices and herbs from Arab countries, including coriander, parsley, and basil. These new foods and spices was responsible for an eruption in recipe publications, the majority of which are now in private cookery archives. By the advent of the twentieth century, cooking books were highly popular mostly due to more people being able to read, people having more leisure time and disposable income. The introduction of the TV brought us TV cooks and the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, allowing everyone to access thousands of recipes like the ones you can find on sites such as the one you are reading now. |
