The History of Recipes
We are able to read the history of `recipes` way back into the far past, in truth as far back as pharonic Egypt, and possibly even further. In practice though, mostly, these ancient records were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
As we move into The time of the romans around 25BC a roman called Apicius assembled a collection of scripts which described recipes cooked by the Romans. He describes how the meals were divided into starters, main course and desserts, something that is very familiar to us today. Aspicius informs us how the chefs of Roman times used many different spices, including a few that are still present in modern kitchens for example thyme, rue and parsley. During the next few centuries, the upper-class families of Wesstern Europe tried to offer the most extravagent meals, and as a consequence, chefs and their recipe collections were at a premium. Notwithstanding that, it was during the nineteenth century that fine cooking and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated their lives to collating, testing, and recording the recipes of their peers. By the advent of the 20th century, cooking books are starting to become popular mostly as a result of more people being able to read, more spare time and having more money to spend. |
