The History of Recipes
We can trace the history of written recipes back into ancient history, at least as far back as the early Egyptians, and maybe even further. Interesting though that maybe, in the main part, these early cook books were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.
Later on, in Roman times around 25BC a man called Apicius created some documents detailing recipes cooked by wealthy Romans. In his publication, he tells us how the roman meals were split into hors d`oeuvres, main course and desserts, something we still use today. Additionally, he tells us how the ancient Romans were skilled in the use of a wide range of spices, including many that are still in use today such as bay, rue and dill. For the next few years, the rich families of the West competed to serve up the most exotic banquets, and consequentially chefs and their recipes were at a premium. Even so, it wasn`t until the nineteenth century the formal cooking and recipe collections became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to assembling, testing, and recording the recipes that were being prepared for the better households. By the advent of the twentieth century, cooking publications were in great demand, mostly due to better eduction, increased leisure time and having more disposable income. |
