The History of Recipes
Historians have tracked the existance of recipes way back into the far past, in truth as far back into history as the Egyptians, and possibly even further than that. Having said that, these, early cookbooks were just simple hieroglyphic instructions for preparing meals.
Fascinatingly, the most ancient recipe discovered, according to Professor Solomon Katz, are some stone tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful. As our culinary historical trip moves on a few more years we have two interesting recipe books from the 14th Century - one book titled `Forme of Cury`, and another named `Curye on Inglish`. Don`t be fooled by the titles though, these two books are nothing to do with the indian food that is served today, but rather accounts of the types of food served to the rich and powerful of that period. In the fifteenth century, knights returning from the crusades brought back many new foods, spices and herbs from the holy lands, such as coriander, basil and rosemary. These new culinary innovations led to a surge in recipe publications, the majority of which are now in private cookery archives. Over the following few hundred years, the upper-class families of Europe tried to serve up the best banquets, and consequentially cooks and their recipes were greatly in demand. Notwithstanding that, it was during the 1800s that haute cuisine and cookery books became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated years of their lives to assembling, trying out, and recording recipes to allow everyone to enjoy them. By the arrival of the 20th century, cooking books are increasing in popularity due to better eduction, people having more free time and being a little richer. The introduction of television brings us celebrity chefs and the spin-off recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing us all to search through thousands of recipes just like those on sites such as the one you are reading now. |
