1 lb tofu, firm
1/4 cup mirin
1/4 cup tamari
1 tsp ginger, fresh, minced
1 dash pepper, cayenne
Directions
Cut tofu lengthwise into 4 "filets".
Mix together mirin, tamari, ginger and cayenne.
Marinatae tofu in mixture for at least one hour or overnight.
Grill tofu over hot coals until heated through and lightly browned.

The History of Recipes
It is quite feasible to follow the history of recipes way back into the distant past, in truth as far back into recorded history as the Egyptians, and possibly even further. In practice though, generally, these early recipes were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.
Interestingly, the most ancient recipe in existence, according to Professor Solomon Katz, is a collection of clay tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `exhilarated, wonderful and blissful`. Moving on, there are a couple of interesting cookery books from the 1300s - a recipe book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Don`t be fooled by the titles though, these have no connection with the indian food that we all know today, but rather recipes for the types of food prepared for the upper classes of the period. During the next few hundred years, the powerful families of the West tried to serve the best banquets, and as a consequence, cooks and their recipes were highly sought after. Notwithstanding that, it wasn`t until the 19th century that haute cuisine and recipe books really came of age. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to collating, verifying, and publishing recipes common in their social group. By the advent of the 1900s, recipe books are increasing in popularity due to more people being able to read, more free time and being a little richer. |
