The History of Recipes
It is quite possible to trace the history of transcribed cooking instructions way back into history, in truth as far back as early Egypt, and possibly even further than that. In practice though, these, old cookbooks were just primitive pictorial recipes for preparing meals.
As we move into Roman times 25BC a roman called Apicius assembled a collection of scripts describing recipes cooked by wealthy Romans. In his works, he describes how the meals were separated into appetizers, main meal and dessert, a style of dining still practiced today. Aspicius describes how the ancient cooks used many spices and herbs, including some that we all recognise such as thyme, fennel and dill. During the next few centuries, the upper-class families of Wesstern Europe competed with each other to serve the best banquets, and consequentially the best chefs and their recipes were highly sought after. However, it was during the 19th century that haute cuisine and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collating, testing, and writing down recipes for their fellow cooks to enjoy. By the advent of the 20th century, cooking books are in high demand, due to better eduction, people having increased spare time and being a little richer. |
