10 1/2 oz chicken broth, condensed
3 tbsp lemon juice
1 tsp dried basil
1 tsp dried thyme
1/8 tsp pepper
2 lb chicken
Directions
Mix broth, lemon juice, basil, thyme, and pepper in non-metallic
dish. Add chicken. Refrigerate 30 min.
Broil on rack 6" from heat 30 min. or until no longer pink, turning
and brushing often with sauce.

The History of Recipes
It is possible to read the history of written recipes back into ancient history, certainly as far back as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that is, generally, these early records were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
Later on, in The time of the roman empire 25BC a man called Apicius created some documents describing recipes enjoyed by his fellow Romans. In his publication, he tells us how the roman meals were separated into starters, main meal and desserts, something we still use today. Additionally, he tells us how the cooks of Roman times were skilled in the use of a good variety of aromatic flavours, including some that we all recognise like basil, fennel and parsley. Later, in the fifteenth century, knights returning from the crusades brought back many foods and spices from the East, such as parsley and basil. The introduction of these new culinary ideas led to an eruption in books on cookery, most of which still exist in private collections. The arrival of television brings us cooking programs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing everybody to access massive numbers of recipes such as those found on sites such as the one you are reading now. |
