The History of Recipes
It is possible to read the history of written recipes back into history, in truth as far into history as pharonic Egypt, and potentially, even further back. However, sadly, these ancient cook books were just very basic pictorial instructions for meal preparation.
In fact, the most ancient recipe discovered, according to Professor Solomon Katz, is a series of tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful and exhilarated. Later on, in The time of the roman empire 25BC a man called Apicius compiled a few scripts which described recipes cooked by wealthy Romans. In his works, Apicius describes how the meals were divided into starters, main course and desserts, a style of dining still practiced today. Aspicius tells us how the early Romans were skilled in the use of many different aromatic flavours, including a few that are still present in modern kitchens like bay, rue and dill. Later, in the fifteenth century, the Crusaders brought back many new foods and herbs from the holy lands, including spices like basil and rosemary. These new herbs and spices was responsible for a torrent in books on cooking, many of which are kept safe in private collections. For the decades that followed, the wealthy families of Wesstern Europe tried to serve up the most extravagent meals, and consequentially the best chefs and their collection of recipes were highly sought after. Nevertheless, it was during the nineteenth century that fine cooking and recipe collections reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to assembling, trying out, and recording recipes that were common in the better off homes of the day. The arrival of television brought us celebrity TV chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to access massive numbers of recipes like those on our site. |
