The History of Recipes
We can trace the history of `recipes` way back into the distant past, at least as far as the early Egyptians, and possibly even further than that. However, these, ancient records were just very basic pictorial, hieroglyphic or cunieform recipes for preparing meals.
Progressing into Roman times around 25BC a man called Apicius assembled a number of documents describing recipes enjoyed by the Romans. In his works, Apicius tells us how the meals of wealthy Romans were separated into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the Roman cooks made use of many different aromatic flavours, including some familiar names such as thyme, rue and parsley. Later on in the 1400s, the Crusaders brought back many foods, spices and herbs from Arab cuisine, such as coriander, basil and rosemary. The introduction of these new foods and spices created a surge in publications on food, some of which are kept safe in private collections. By the advent of the twentieth century, recipe books are in high demand, due to higher levels of literacy, people having more free time and a general increase in wealth. |
