The History of Recipes
It is quite possible to prove the history of written cooking instructions way back into ancient history, at least as far back as the ancient Egyptians, and possibly even further than that. However, in the main part, these old cook books were just very basic pictorial recipes for meal preparation.
In fact, the oldest recipe found, according to experts in ancient history are a few tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated. Progressing into Roman times around 25BC a man called Apicius created a collection of scripts detailing recipes enjoyed by his fellow Romans. In his publication, he tells us how the meals were split into hors d`oeuvre, main course and dessert, something that is very familiar to us today. This early Roman chef tells us how the Roman chefs made use of many different spices and herbs, including many that are still in use today for example thyme, rue and parsley. Later on, we have two recipe books dating from the 14th Century - a book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, these are not about the indian food that appears on menues today, but rather descriptions of the types of meals on the menues of the rich and powerful of that time. Later on in the 1400s, knights returning from the crusades brought us a variety of spices and herbs from the East, such as coriander, parsley, and rosemary. These new herbs and spices prompted a torrent in recipe manuscripts, some of which are now in academic collections. By the advent of the twentieth century, cooking publications are highly popular mostly due to increased literacy, people having more free time and a general increase in wealth. The introduction of the TV brought us TV cooks and the accompanying recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing us all to search through massive numbers of recipes like those on this recipe site. |
