The History of Recipes
Recipes as an idea can be observed far back into the far past, in truth as far as the ancient Egyptians, and possibly even further. In practice though, generally, these ancient cook books were just simple pictorial instructions for meal preparation.
The truth of the matter is, the oldest recipe in existence, according to food historians are some tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful and exhilarated. As we move into The time of the romans around 25BC a roman called Apicius assembled a collection of documents describing recipes prepared by wealthy Romans. In his publication, Apicius tells us how the roman meals were separated into starters, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he recounts how the Roman chefs used a wide range of aromatic flavors, including a few you will know such as basil, rue and asafoetida. As we move on, we have some recipe books published in the 14th Century ; a cookery book titled `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are a little misleading though, they are nothing to do with the indian food that is served today, but rather descriptions of the types of food prepared by the chefs of the rich people of the period. Later, in the fifteenth century, knights returning from the crusades brought back many foods and spices from Arab cooking, including parsley and basil. The introduction of these new tastes led to an outbreak in recipe manuscripts, the majority of which still exist in academic collections. By the advent of the 20th century, cooking books are in great demand, as a result of more people being able to read, people having more spare time and having more money to spend. The revolution that is television brings us TV cookery programs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, allowing us all to search through thousands of recipes just like those on sites such as the one you are reading now. |
