1 large carrot, scrapped and trimmed
1 cup yogurt
1 tsp sugar
1/4 tsp ground cumin
1/4 cup finely chopped onion
1/2 tsp fresh red or green pepper, hot, fin, ely chopped, or
1/2 tsp crushd hot red pepper flakes
Directions
1. Cut carrot into coarse shreds with hand grater or food processor.
there should be about 1 cup.
2. Drop carrot shreds into boiling water and cook for about 30
seconds. Drain well.
3. Combine yogurt, carrots and remaining ingredients. Serve chilled

The History of Recipes
It is possible to follow the history of written recipes far back into history, in fact as far back into history as the Egyptians, and maybe further still. However, in the main part, these early records were just primitive hieroglyphic recipes for meal preparation.

Progressing into The time of the roman empire 25BC a roman called Apicius wrote a number of documents showing how to cook the recipes enjoyed by the Romans. He describes how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the early Romans were skilled in the use of a good variety of herbs and spices, including a few you will know for example thyme, fennel and asafoetida. Later on in the 1400s, people returning from the crusades brought back a variety of foods, spices and herbs from Arab cuisine, including coriander, parsley, basil and rosemary. These new herbs and spices prompted an outbreak in cookery books, the majority of which are kept safe in academic collections. For the centuries that followed, the powerful and rich houses strove to serve up the best banquets, and because of this the best cooks and their collection of recipes could command a high salary. Nevertheless, it wasn`t until the 1800s the formal cooking and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to assembling, testing, and recording recipes to allow everyone to enjoy them. By the time we get to the 20th century, cook books were in great demand, as a result of higher levels of literacy, people having more spare time and disposable income. The arrival of television gave us TV cookery programs and the demand for the accompanying recipe books. And that brings us to the present day and the internet revolution, allowing everybody to search through massive numbers of recipes just like those on this web site. |
