The History of Recipes
We are able to read the history of written recipes way back into the far past, in truth as far into history as the Egypt of the Pharoahs, and quite possibly further than that. Interesting though that maybe, generally, these early cookbooks were just basic pictorial instructions for preparing food.
In fact, the most ancient recipe in existence, according to experts are a few ancient tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `exhilarated, wonderful and blissful`. Progressing into Roman times around 25BC a man called Apicius assembled a number of documents showing how to cook the recipes prepared by the Romans. In his works, Apicius describes how the meals were divided into hors d`oeuvres, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the ancient cooks were skilled in the use of a wide range of spices and herbs, including a few that will be familiar to modern cooks like thyme, rue and dill. Later on in the 1400s, the Crusaders brought back many new foods and spices from Arab countries, including spices such as coriander, parsley, and basil. These new herbs and spices created a torrent in recipe manuscripts, some of which are kept safe in private cookery archives. The introduction of the TV brought us celebrity TV chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, allowing everyone to access massive numbers of recipes just like those on this site. |
