3 cup carrots, shredded
1 qt boiling water
1/2 each serrano chili, seeded & - minced
2 tbsp lime juice
1/2 tbsp maple syrup
2 tbsp cashew pieces, toasted
1 tbsp cilantro, chopped
Directions
Place carrots in a colander. Pour boiling water over them, drain
well. Combine chili, lime juice & maple syrup in a bowl & whisk with
a fork. Add carrots, cashews & cilantro & toss to mix. Serve at room
temperature or chilled.

The History of Recipes
Food historians have traced the existance of recipes back into distant history, in truth as far back into recorded history as the Egypt of the Pharoahs, and potentially, even further back. Having said that, in the main part, these early records were just very basic pictorial recipes for preparing food.
In fact, the oldest recipe discovered so far, according to food historians is a series of tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `exhilarated, wonderful and blissful`. Later on, in The time of the roman empire 25BC a roman called Apicius compiled a few documents detailing recipes enjoyed by wealthy roman citizens. In his publication, he recounts how the roman meals were divided into starters, main meal and dessert, something that is very familiar to us today. Aspicius recounts how the Romans were skilled in the use of a good variety of spices and herbs, including some that we all recognise for example thyme, mint and dill. Later, in the fifteenth century, people returning from the crusades brought us a variety of foods and herbs from middle-east cuisine, including coriander, basil and rosemary. These new spices and herbs was responsible for an eruption in manuscripts on food, some of which are kept safe in private cookery archives. By the time we get to the 1900s, cookery publications are highly popular mostly as a result of higher levels of literacy, more leisure time and having more money to spend. The arrival of television brings us TV cooks and the demand for the accompanying recipe books. And that brings us to the present day and the internet revolution, permitting everybody to access massive numbers of recipes such as those found on this recipe site. |
