1/2 cup vinegar
1/2 lb bacon grease or 1 cup wesson oil
1/2 lb butter
1 tbsp pepper, black,freshly ground
1 tbsp cayenne
3 each onion, chopped
1 each worcestershire sauce 10 oz
1 each ketchup, 24 oz
1 tbsp salt
1 tbsp celery salt
1 tsp garlic salt
Directions
Combine all ingredients and simmer on very low fire for at least 20
minutes. Makes sauce for 25 lbs of meat. Excellent for spareribs.

The History of Recipes
It is quite feasible to follow the history of recipes far back into distant history, in truth as far back into recorded history as the Egyptians, and possibly even further. Interesting though that is, in the main part, these early cook books were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
Interestingly, the most ancient recipe found, according to historians are some tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful. Progressing into The time of the romans around 25BC a roman called Apicius wrote a collection of documents which described recipes prepared by the Romans. In his scrolls, he recounts how the meals were divided into hors d`oeuvre, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also informs us how the Romans made use of a wide range of spices, including a few you will know for example basil, mint and asafoetida. Moving on, we find two interesting cookery books from the 1300s ; one book titled `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are somewhat misleading tho`, these are unconnected to the indian food that is served today, but instead descriptions of the types of food served to the rich and powerful of the time. Later, in the 15th century, people returning from the crusades brought back many new foods, spices and herbs from the Middle-East, including spices such as parsley and basil. These new foods and tastes caused a torrent in recipe publications, the majority of which are kept safe in private collections. During the next few hundred years, the powerful and wealthy tried to lay on the best banquets, and as a result chefs and their recipe collections were much in demand. However, it wasn`t until the nineteenth century that haute cuisine and cookery books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, testing, and writing down recipes common in their social group. By the time we get to the twentieth century, cookbooks are increasing in popularity due to increased literacy, more spare time and having more money. Like it or not, the introduction of TV gave us celebrity chefs and the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, permitting everybody to search through massive numbers of recipes just like those on this recipe site. |
