The History of Recipes
We are able to follow the history of `recipes` back into antiquity, in fact as far back into recorded history as pharonic Egypt, and quite possibly further than that. Having said that, mostly, these ancient cookbooks were just basic hieroglyphic recipes for food preparation.
Later on, in The time of the roman empire around 25BC a man called Apicius compiled a collection of scripts showing how to cook the recipes prepared by the Romans. In his publication, he recounts how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and dessert, a very modern way of dining. He also informs us how the early Romans used many spices, including a few that will be familiar to modern chefs such as thyme, fennel and dill. During the following few hundred years, the wealthy families of the West strove to lay on the most extravagent banquests, and as a consequence, the best cooks and their collection of recipes increased in prestige. Notwithstanding that, it wasn`t until the 1800s that fine cookery and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to collecting, testing, and publishing popular recipes of the day. By the advent of the 20th century, cooking books were starting to become popular as a result of more people being able to read, people having increased free time and a general increase in wealth. |
