The History of Recipes
Written recipes as an idea can be found far back into ancient history, in truth as far as early Egypt, and possibly even further than that. Having said that, generally, these ancient records were just very simple hieroglyphic or cunieform instructions for food preparation.
During the time of the Romans a roman called Apicius created a collection of scripts which described recipes prepared by the Romans. In his scrolls, he recounts how the meals were split into hors d`oeuvre, entrees and desserts, something that is very familiar to us today. Aspicius also recounts how the early Romans were skilled in the use of many aromatic flavors, including some that we all recognise like basil, rue and asafoetida. Later on, in the 15th century, people returning from the crusades brought us many new foods and herbs from the holy land, such as coriander, basil and rosemary. These new foods and spices prompted an outbreak in books on cookery, some of which still exist in academic collections. The arrival of TV gave us celebrity chefs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, permitting everybody to access thousands of recipes like the ones you can find on sites such as this. |
