The History of Recipes
Experts have tracked the existance of recipes back into ancient history, certainly as far back into history as pharonic Egypt, and possibly even further than that. Interesting though that maybe, sadly, these old recipes were just primitive hieroglyphic or cunieform instructions for preparing food.
Interestingly, the oldest recipe found, according to historians is a series of stone tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful and exhilarated. Later on, in Roman times 25BC a man called Apicius created some scripts detailing recipes enjoyed by the Romans. In his works, Apicius recounts how the meals were separated into hors d`oeuvre, entrees and dessert, a style of dining still practiced today. Aspicius also tells us how the cooks of Roman times made use of a good variety of spices and herbs, including a few that will be familiar to modern cooks for example bay, fennel and parsley. Closer to modern times, we have a couple of recipe books which were published in the 14th Century : one book called `Forme of Cury`, and another named `Curye on Inglish`. Amusingly, these are nothing to do with the indian food that is popular today, but rather recipes for the types of food enjoyed by the upper classes of the time. In the fifteenth century, knights returning from the crusades brought back a variety of foods and herbs from the Middle-East, such as basil and rosemary. These new spices and herbs prompted an outbreak in recipe manuscripts, many of which still exist in private libraries. Like it or not, the introduction of television brings us TV cooks and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to search through massive numbers of recipes such as those found on this site. |
