The History of Recipes
It is possible to track the history of written recipes way back into distant history, certainly as far back into recorded history as ancient Egypt, and maybe further still. Interesting though that is, mostly, these early recipes were just very simple hieroglyphic recipes for food preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to experts is a collection of tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. As we move into The time of the romans around 25BC a roman called Apicius assembled a few documents showing how to cook the recipes cooked by his fellow Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into hors d`oeuvre, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also informs us how the ancient Romans used many spices and herbs, including some familiar names like bay, rue and dill. During the next few centuries, the upper-class families of Wesstern Europe strove to offer the most exotic banquets, and because of this the best cooks and their collection of recipes were highly sought after. However, it wasn`t until the 19th century that fine cooking and recipe publications reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to collating, testing, and writing down recipes to help cooks of their time. By the advent of the 20th century, cookery publications were greatly in demand due to higher levels of literacy, people having more spare time and disposable income. |
