The History of Recipes
It is quite feasible to prove the history of transcribed cooking instructions way back into antiquity, certainly as far back into recorded history as the Egyptians, and possibly even further. Interesting though that is, mostly, these ancient cookbooks were just basic hieroglyphic recipes for preparing food.
In fact, the oldest recipe discovered so far, according to Professor Solomon Katz, are some tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. Progressing into Roman times around 25BC a roman called Apicius compiled a number of documents detailing recipes prepared by the Romans. In his works, he recounts how the meals were separated into appetizers, main course and desserts, a very modern way of dining. Aspicius also recounts how the ancient Romans were skilled in the use of many different spices, including some that we all recognise like thyme, fennel and dill. Later on, there were a couple of cookery books from the 1300s : one book titled `Forme of Cury`, and another called `Curye on Inglish`. The titles are somewhat misleading tho`, these two books are not about the indian curry that we all know today, but instead accounts of the types of food served to the upper classes of the time. Later on in the 1400s, people returning from the crusades brought us a variety of foods, spices and herbs from middle-east cuisine, including spices such as basil and rosemary. These new foods and tastes led to an increase in books on cooking, the majority of which are kept safe in private libraries. The introduction of the TV brings us TV cooks and the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, permitting everyone to access thousands of recipes like those on this recipe site. |
