The History of Recipes
It is quite possible to follow the history of written cooking instructions way back into distant history, in fact as far back into history as the early Egyptians, and potentially, even further back. Having said that, these, ancient cook books were just basic hieroglyphic or cunieform recipes for preparing food.
The truth of the matter is, the most ancient recipe discovered, according to Professor Solomon Katz, is a collection of tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated and blissful. As we move into Roman times around 25BC a roman called Apicius assembled a number of documents showing how to cook the recipes enjoyed by the Romans. In his publication, Apicius tells us how the roman meals were split into hors d`oeuvre, entrees and desserts, a very modern way of dining. He also recounts how the cooks of his times were skilled in the use of a wide range of herbs and spices, including many that are still in use today such as thyme, rue and parsley. Later, in the 15th century, knights returning from the crusades brought back a variety of foods, spices and herbs from the holy lands, including spices like coriander, parsley, and rosemary. These new culinary innovations prompted an outbreak in books on cooking, the majority of which are kept safe in private collections. By the advent of the 1900s, cookery publications were greatly in demand due to better eduction, people having increased spare time and being a little richer. The revolution that is television brings us TV chefs and the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, allowing everyone to access massive numbers of recipes just like those on our web site. |
