The History of Recipes
Food historians have traced the existance of recipes far back into ancient history, at least as far back into recorded history as the Egyptians, and quite possibly further than that. However, mostly, these old cook books were just very basic hieroglyphic or cunieform instructions for food preparation.
During Roman times around 25BC a roman called Apicius created a collection of scripts describing recipes prepared by his fellow Romans. In his publication, Apicius describes how the roman meals were divided into hors d`oeuvres, main meal and afters, a style of dining still practiced today. Aspicius also tells us how the cooks of Roman times were skilled in the use of a good variety of herbs, including some familiar names for example basil, rue and parsley. In the fifteenth century, people returning from the crusades brought us many foods, spices and herbs from middle-east cuisine, including spices like coriander, parsley, and basil. These new herbs and spices caused an eruption in manuscripts on cookery, many of which are now in private cookery archives. By the arrival of the 1900s, cookery books are in great demand, due to higher levels of literacy, people having increased free time and having more disposable income. |
