The History of Recipes
It is quite possible to trace the history of transcribed cooking instructions way back into the far past, in truth as far back as early Egypt, and possibly even further. However, mostly, these ancient cook books were just very simple hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the most ancient recipe in existence, according to Professor Solomon Katz, is a series of clay tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful and blissful. As we move on, we have a couple of books which were published in the fourteenth century - a recipe book called `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, these two books are unconnected to the spicy food that is familiar to us all today, but rather recipes for the types of meals prepared by the chefs of the rich and wealthy people of those days. Later, in the fifteenth century, knights returning from the crusades brought us many new foods and herbs from Arab cooking, including spices like coriander, parsley, and rosemary. These new culinary innovations led to an eruption in manuscripts on cookery, most of which still exist in private libraries. During the next few centuries, the rich families of Europe strove to lay on the most extravagent meals, and as a consequence, the best chefs and their recipes were highly sought after. Notwithstanding that, it was during the 19th century that cooking and recipe books really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to assembling, testing, and recording recipes to help cooks of their time. The revolution that is television brought us celebrity TV chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing everyone to search through thousands of recipes just like those on this site. |
