The History of Recipes
It is possible to track the history of meal recipes back into distant history, in fact as far back into history as pharonic Egypt, and possibly even further. However, generally, these early cook books were just basic pictorial, hieroglyphic or cunieform recipes for preparing food.
Much later, in Roman times a man called Apicius assembled a collection of scripts detailing recipes prepared by wealthy Romans. In his publication, he tells us how the roman meals were separated into hors d`oeuvre, main meal and desserts, something we still use today. Aspicius informs us how the Roman cooks were skilled in the use of many different herbs and spices, including some familiar names such as basil, rue and parsley. Later on, in the 15th century, the Crusaders brought back a variety of spices and herbs from Arab cuisine, including spices such as coriander, parsley, and basil. The introduction of these new culinary ideas caused an explosion in books on cookery, many of which are now in academic collections. When we get to the twentieth century, recipe books are highly popular mostly due to higher levels of literacy, more spare time and having more money. |
