The History of Recipes
We are able to read the history of `recipes` back into distant history, in fact as far into history as ancient Egypt, and potentially, even further back. However, mostly, these early records were just basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
Interestingly, the oldest recipe discovered, according to experts in ancient history are some clay tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. During Roman times around 25BC a roman called Apicius assembled a collection of scripts detailing recipes prepared by the Romans. In his publication, he tells us how the meals were divided into hors d`oeuvre, main course and afters, something that is very familiar to us today. This early Roman chef tells us how the Romans used many herbs, including a few you will know such as thyme, fennel and parsley. During the succeeding few hundred years, the upper-class families of Wesstern Europe competed to lay on the most extravagent banquests, and consequentially cooks and their collection of recipes could command a high salary. Notwithstanding that, it wasn`t until the nineteenth century the formal cooking and recipe publications reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to collecting, verifying, and publishing popular recipes of the day. Like it or not, the introduction of television brings us TV cooks and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everybody to search through thousands of recipes like the ones you can find on the site you are now reading. |
