The History of Recipes
It is quite feasible to follow the history of recipes back into distant history, certainly as far back into recorded history as the ancient Egyptians, and possibly even further. Having said that, in the main part, these old cookbooks were just very simple pictorial, hieroglyphic or cunieform recipes for preparing food.
Interestingly, the most ancient recipe discovered so far, according to food historians is a collection of ancient tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. Later on, in Roman times 25BC a roman called Apicius assembled a collection of documents showing how to cook the recipes cooked by his fellow Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into appetizers, main meal and afters, a style of dining still practiced today. Aspicius informs us how the early Romans were skilled in the use of a good variety of aromatic flavours, including some that we all recognise like thyme, mint and asafoetida. In the fifteenth century, knights returning from the crusades brought back a variety of foods and herbs from Arab cuisine, including spices such as coriander, basil and rosemary. The introduction of these new culinary ideas led to an explosion in manuscripts on cookery, many of which are now in academic collections. During the succeeding few hundred years, the upper-class families of Europe strove to offer the most extravagent meals, and because of this chefs and their recipes were at a premium. However, it was during the 19th century that cooking and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to collecting, trying out, and recording recipes that were common in the better off homes of the day. By the arrival of the 1900s, cooking books are greatly in demand mostly as a result of higher levels of literacy, leisure time and having more money to spend. Like it or not, the introduction of television brings us TV chefs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of the internet, permitting everybody to access massive numbers of recipes such as those found on our site. |
