The History of Recipes

It is possible to track the history of meal recipes way back into the far past, in fact as far into history as the Egypt of the Pharoahs, and maybe even further. Interesting though that maybe, mostly, these early records were just simple hieroglyphic or cunieform recipes for food preparation.

Interestingly, the most ancient recipe in existence, according to historians are a few tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful.

During Roman times around 25BC a man called Apicius assembled a number of scripts showing how to cook the recipes cooked by his fellow Romans. In his publication, he recounts how the meals of wealthy Romans were separated into starters, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also informs us how the ancient cooks made use of a good variety of spices and herbs, including a few that are still present in modern kitchens for example basil, rue and parsley.

Moving on, we have a couple of interesting cookery books which appeared in the fourteenth century - one book titled `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are somewhat misleading tho`, these books are unconnected to the indian curry that is served today, but instead descriptions of the types of food prepared for the upper classes of that time.

In the fifteenth century, the Crusaders brought back many foods and herbs from the East, including coriander, basil and rosemary. These new foods and tastes caused an eruption in books on cookery, the majority of which are kept safe in academic collections.

By the arrival of the 20th century, cooking books were in great demand, mostly as a result of increased literacy, people having more leisure time and disposable income.
