The History of Recipes
Recipes as a concept can be tracked way back into history, at least as far back into history as the early Egyptians, and potentially, even further back. Interesting though that maybe, sadly, these ancient recipes were just very basic hieroglyphic or cunieform recipes for preparing food.
In an interesting twist, the oldest recipe discovered so far, according to experts in ancient history is a collection of stone tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated. Much later, in Roman times a roman called Apicius compiled a collection of scripts describing recipes prepared by wealthy Romans. In his works, Apicius recounts how the roman meals were separated into appetizers, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the chefs of Roman times were skilled in the use of many spices, including a few that will be familiar to modern chefs for example bay, fennel and parsley. Later on, in the 15th century, knights returning from the crusades brought back many spices and herbs from middle-east cuisine, including spices like coriander, parsley, and rosemary. These new spices and herbs led to an eruption in manuscripts on cooking, the majority of which are now in private libraries. Over the succeeding few hundred years, the rich and powerful families of Europe competed with each other to offer the most exotic banquets, and because of this the best chefs and their recipes increased in prestige. Even so, it was during the 19th century that cooking and cookery books rose to prominence. Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to collecting, testing, and publishing the recipes of their peers. When we get to the twentieth century, cookery publications are in great demand, mostly due to higher levels of literacy, people having increased spare time and a general increase in wealth. The TV revolution brings us TV cookery programs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to access thousands of recipes like the ones you can find on this web site. |
