The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions far back into history, in truth as far as the ancient Egyptians, and maybe even further. Interesting though that is, sadly, these early cook books were just simple pictorial recipes for preparing food.
Interestingly, the most ancient recipe discovered so far, according to academics is a series of ancient tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `exhilarated, wonderful and blissful`. As we move into The time of the romans 25BC a roman called Apicius wrote a number of documents which described recipes prepared by wealthy roman citizens. He recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main course and afters, a style of dining still practiced today. Additionally, he informs us how the ancient chefs used many different spices, including many that are still in use today like basil, mint and dill. During the succeeding few centuries, the powerful and rich houses tried to lay on the most exotic meals, and because of this chefs and their recipe collections were at a premium. However, it wasn`t until the nineteenth century that cooking and recipe collections became really popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collating, testing, and recording recipes to allow everyone to enjoy them. By the time we get to the twentieth century, cook books were increasing in popularity mostly due to higher levels of literacy, increased leisure time and having more disposable income. |
