Cheesy Potatoes Recipe

Ingredients

1 1/2 lb old potatoes, peeled, washed cut in, to even chunks
3 tbsp softened butter
1 size 3 egg yolk
3 tbsp single cream
2 oz red leicester cheese, grated
1 salt and pepper
1 chopped parsley, to garnish


Directions

Cook the potatoes in lightly salted water until tender. Drain well,
then use an electric hand mixer until smooth.

Add butter, egg yolk, cream and cheese and process for several
seconds. Season to taste and place in a piping bag with a large
fluted nozzle. Pipe onto plates and use parsley to garnish.

The History of Recipes

Historians have proved the existance of recipes way back into the far past, at least as far back into recorded history as the Egypt of the Pharoahs, and maybe further still. Interesting though that maybe, mostly, these ancient recipes were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.

Interestingly, the oldest recipe found, according to historians are some stone tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful.

During Roman times 25BC a man called Apicius assembled some documents detailing recipes prepared by his fellow Romans. He recounts how the meals were split into appetizers, main meal and desserts, a style of dining still practiced today. Aspicius also informs us how the ancient cooks made use of many spices and herbs, including some that we all recognise such as bay, rue and parsley.

Later, in the 15th century, the Crusaders brought back a variety of spices and herbs from the Middle-East, including spices such as rosemary and coriander. The introduction of these new herbs and spices led to an explosion in recipe books, many of which are kept safe in private cookery archives.

During the succeeding few centuries, the powerful families of Europe competed to serve the most exotic banquets, and as a result chefs and their recipe collections were greatly in demand. Even so, it was during the 19th century that cookery and recipe collections became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated the best years of their lives to collating, testing, and writing down popular recipes of the day.

Like it or not, the introduction of TV brought us TV cooks and the accompanying recipe books.

Which pretty much brings us to the present day and the invention of the internet, allowing us all to search through massive numbers of recipes like the ones you can find on this site.
