The History of Recipes
It is possible to track the history of meal recipes way back into ancient history, in truth as far back into recorded history as pharonic Egypt, and potentially, even further back. Having said that, in the main part, these early recipes were just basic hieroglyphic instructions for food preparation.
In fact, the most ancient recipe found, according to experts in ancient history is a series of stone tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. Later, we have a couple of interesting cookery books which were published in the fourteenth century : a book called `Forme of Cury`, and another entitled `Curye on Inglish`. Perhaps surprisingly, these two books are unconnected to the indian food that is served today, but instead descriptions of the types of meals on the tables of the rich people of the period. Later on in the 1400s, knights returning from the crusades brought us many new foods and spices from the Middle-East, including spices like coriander, parsley, basil and rosemary. These new foods and spices led to a torrent in recipe manuscripts, some of which are kept safe in academic collections. For the decades that followed, the rich families of Europe tried to serve the most extravagent banquests, and as a result the best chefs and their collection of recipes could command a high salary. Nevertheless, it was during the nineteenth century that haute cuisine and recipe publications reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to assembling, trying out, and publishing the recipes that were being prepared for the better households. By the time we get to the 20th century, recipe books were increasing in popularity as a result of increased literacy, people having increased leisure time and a general increase in wealth. The arrival of television brought us celebrity chefs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting us all to search through thousands of recipes just like those on our site. |
