The History of Recipes
Experts have tracked the existance of recipes far back into antiquity, at least as far as the Egypt of the Pharoahs, and possibly even further. Interesting though that is, generally, these old cookbooks were just simple pictorial, hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the most ancient recipe discovered, according to historians is a collection of tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful and exhilarated. During the time of the Roman Empire a man called Apicius compiled some scripts showing how to cook the recipes enjoyed by his fellow Romans. In his scrolls, he tells us how the meals of wealthy Romans were separated into hors d`oeuvres, main course and desserts, something we still use today. Aspicius describes how the early Romans used a good variety of aromatic flavors, including some that we all recognise for example basil, rue and dill. In the fifteenth century, knights returning from the crusades brought us a variety of foods and spices from the holy lands, such as rosemary and coriander. The introduction of these new herbs and spices created an increase in books on cookery, most of which are kept safe in private collections. Over the following few hundred years, the rich families of Europe strove to serve up the most extravagent banquests, and consequentially cooks and their recipe collections were greatly in demand. Even so, it wasn`t until the nineteenth century that fine cooking and recipe books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to collecting, trying out, and writing down the recipes of their peers. The introduction of television brought us TV chefs and the demand for the spin-off recipe books. And that brings us to the present day and the internet revolution, permitting everybody to access thousands of recipes such as those found on sites such as this. |
