4 each boneless skinless chicken
1 breast halves
1 cup extra virgin olive oil
1/4 cup red wine vinegar
1 each orange zest -- julienned
1 tsp thyme
1 tsp sage
1/2 cup shallots -- finely chopped
1 cup whole fresh raspberries
1 cup orange sections
Directions
Marinate the chicken breasts in a mixture of all ingredients except
for the orange sections for two hours. Romove from the marinade and
oven roast the breasts at 350 degrees for 10 minutes on each side, or
until done. Remove to a serving platter and deglaze the roasting pan
with the marinade. Transfer the marinade to a sauce pan and reduce to
thicken slightly. Finish the sauce with 1 cup orange sections. Serve
with the reduced raspberry marinade sauce.

The History of Recipes
It is actually possible to trace the history of written cooking instructions back into history, at least as far into history as pharonic Egypt, and potentially, even further back. During the time of the Roman Empire a roman called Apicius created some scripts describing recipes enjoyed by wealthy Romans. In his scrolls, Apicius recounts how the roman meals were split into hors d`oeuvre, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also describes how the ancient Romans used many different herbs, including some familiar names like bay, mint and dill. In the fifteenth century, people returning from the crusades brought back many foods and herbs from Arab cooking, such as rosemary and coriander. These new foods and spices prompted an eruption in manuscripts on cooking, the majority of which still exist in private libraries. By the arrival of the 20th century, cookbooks are in high demand, mostly as a result of more people being able to read, more free time and having more money. |
